Brie and cranberry make one match made in heaven. If you like gourmet cheese, or just gourmet food in general, then brie is surely on your favourite list. I do love a good cheese board in winter, it's hard to find anything better.

Starting with Thanksgiving, then onto Christmas and the whole festive season, the cranberry sauceis by far one of the most popular choice when it comes to sauces to go with that nice roast turkey.

But it can also be used to make a lot sweet or savoury treats, and these brie and cranberry bites are the mother of all festive appetizers.

Flaky puff pastry, gooey brie, and a rich cranberry sauce, that's all you need to impress all your guests. Minimal prep, and they are ready in under 30 minutes, what's not to love about them?

These bites would be a treat to add to your Thanksgiving menu, Christmas menu or your New Year's Eve party menu.

Ingredients needed

  • brie cheese - cubed
  • cranberry sauce - either homemade or stop-bought
  • ready-rolled puff pastry - or a block of puff pastry, rolled by hand
  • a few springs of fresh rosemary
  • butter - to grease the muffin tin

Step-by-step photos and instructions

Whether you make your own sauce or you settle for a store-bought version, these bites are absolutely delicious.

  • start by preheating the oven to 180 degrees Celsius (350 Fahrenheit)
  • cut the ready-rolled puff pastry into 6 squares
  • grease the muffin tin with butter, then arrange each square into he muffin holes, making sure they mould the tin well
  • cut the brie into cubes, and add 2 cubes into each pastry, followed by a teaspoon of cranberry sauce, then a little sprig of fresh rosemary
  • bake for 25 minutes until the pastry is golden

Expert tips

Don't bother making puff pastry, the store-bought one is as good, ready-rolled too, which means you have a stress-free task.

Even if your muffin tin (or whichever tin you use) is brand new and it does not stick at all, I recommend greasing it well before adding the puff pastry.

They will pop put easily when ready, and you don't have to worry about some not-so-perfect brie and cranberry puff pastry.

When ready, leave them to cool before removing from the tin, hot puff pastry does not hold very well. Use a sharp knife around the edges if you have problems removing them from the tin, but they should come out perfectly.

Serve them the same day, I find that the puff pastry becomes soggy next day - and even if the bites are still delicious, they are not crispy and flaky anymore.

  • 1 cup brie cheese, cubed

  • 1 ready-rolled puff pastry
  • a few springs of fresh rosemary

  • Preheat the oven to 180 degrees Celsius (356 Fahrenheit).

  • Cut the puff pastry into 6 squares.

  • Grease the muffin tin, then arrange the puff pastry into each muffin tin hole.

  • Add about 2 cubes of brie, one teaspoon of cranberry sauce, and a bit of fresh rosemary to each puff pastry.

  • Bake for about 25 minutes or until golden.

  • Remove from the oven, leave to cool, then use a sharp knife to loosen up the edges of the bites.
