Homemade Candy is the Best Christmas Gift!

Every year for the last 15 years I have made homemade candy at Christmas. This is not a small undertaking and by the end of my week-long candy-making frenzy I end up with about 40 pounds of candy. Yes, that is a LOT of homemade candy!

This year I am making 17 different kinds ranging from homemade caramels to Kahlua truffles. My all-time favorite candy is one that I just started making a few years ago called the Hazelnut Marzipan ball. It has only a few ingredients, although you might have to look around for them a bit.

I had a lot of trouble finding hazelnuts and one year had to order 6 bags from Amazon. That was 5 bags too many so we ate a lot of hazelnuts over the next few months! If you want to try your hand at this homemade candy recipe, I have included a few affiliate links for items you might need.

Those up there are hazelnuts. You might also see them called filberts still in the shell. Often, you will find them already shelled with a skin on them that you have to rub off after you toast them.

It isn’t hard to do at all! Just throw the nuts on a cookie sheet, and bake them in a 350-degree oven for 5 to 10 minutes to toast them. You will start to smell them a bit and they will get shiny with oil. Then, take them out of the oven, dump them on a clean hand towel and rub them really firmly. The skins will rub off and you will be left with toasted hazelnuts.

I found these hazelnuts at Whole Foods and some kind soul had already deskinned them so I was happy to skip that step and just roasted them for a few minutes in the oven to add a bit of flavor. If you have trouble finding them, you can buy hazelnuts on Amazon.

What is marzipan?

Marzipan is a very sweet dough made from sugar and almonds. It is unbelievably heavenly stuff and I have seriously considered just sitting down and eating the entire roll!

You can find it in a few good-sized grocery stores or buy marzipan on Amazon. This stuff, mixed with toasted hazelnuts, powdered sugar and Frangelico (a Hazelnut liquor) is all you need to make the center for this homemade candy.

Additional Time4 hours

Total Time5 hours

Ingredients

  • 1/2 cup powdered sugar (plus more for dusting)
  • 3 rolls (8 ounces each) of marzipan
  • 1 1/2 cups ground and toasted hazelnuts (plus more for sprinkling on top)
  • 4 TBSP Frangelico
  • melted chocolate coating for dipping (do not use real chocolate unless you temper it! You want chocolate 'bark' or 'coating' like you find in a craft store!)

Instructions

  1. Into a heavy mixer place the powdered sugar, marzipan, ground hazelnuts, and Frangelico. If you do not have a mixer they can be kneaded by hand like a bread dough but it will take a bit of muscle! Use powdered sugar for dusting if you are kneading on a counter or cutting board.
  2. If your dough seems overly wet and sticky, add enough powdered sugar so you can pinch off small pieces and roll into 1 1/2 inch balls
  3. Place all of your rolled up balls of center on waxed paper.
  4. When all of the dough is rolled, melt the chocolate coating in the microwave on LOW (important!) or in a double boiler,
  5. Once the chocolate is melted, dip each center in melted chocolate and place onto a new piece of wax paper. This sometimes takes a while to get a good technique. I HIGHLY recommend a dipping spoon like they sell at most major craft stores! It only costs a few dollars but will save you a ton of work and make your candy look much prettier!
  6. As you dip the candies, sprinkle the tops with leftover ground toasted hazelnuts.
  7. Let firm up for about an hour.
  8. Store in an airtight container at room temperature. They should be fine for a couple of weeks.

FAQs

Is marzipan candy dough the same as almond paste? ›

Compared to almond paste, marzipan has a higher proportion of sugar, which makes it sweeter, smoother, and more pliable—think Play-Doh. It's typically rolled, molded, dyed, and/or shaped (like into these adorable fruits!) and served as its own or used as a decorative element in larger desserts.

What is marzipan candy made of? ›

Marzipan is a confection consisting primarily of sugar and almond meal (ground almonds), sometimes augmented with almond oil or extract.

Which is better, marzipan or almond paste? ›

Almond paste has a coarser texture but is much softer than marzipan, which allows it to be spread as a filling. Unlike marzipan, almond paste holds up in baking. The sugar content of almond paste is lower and its almond content higher than marzipan.

What is marzipan called in America? ›

Also called almond candy dough, marzipan is an agreeable, multi-purpose combo of the first two, with a subtle almond flavor and unmatched malleability. Be sure to try these marzipan cake recipes.

Why is marzipan so expensive? ›

Marzipan comes from nuts—it's traditionally made with ground almonds. In order to maintain quality standards, many countries regulate the percentage of almonds a recipe must have for it to be legally called "marzipan." This discourages the use of apricot kernels as a cheap substitute for almonds.

How long does homemade marzipan last? ›

It will keep in the fridge for up to 6 weeks. If using it to cover a cake, the marzipan must be allowed to fully dry on the cake for 2-3 days before applying the sugarpaste. Dry marzipan kept it in a cool dry place should be fine for 2-3 months.

What are the two types of marzipan? ›

The German variety is a mixture of almonds and sugar ground coarse and heated until dry, and, after cooling, glucose and icing sugar are added. French marzipan is not cooked, but sugar is boiled with water and added to the almonds to render a finer, more delicate texture and whiter colour.

What is a substitute for marzipan paste? ›

For a quick and dirty solution, almond paste can substitute marzipan in a pinch. In this case, you will need to adjust the sugar in your recipe to make up for the loss of sweetness between almond paste and marzipan.

Is solo almond pastry filling the same as almond paste? ›

The almond paste and almond filling are very different products and should not be used interchangeably in a recipe. The Almond Filling is a jam-like filling for cakes, pastries, and cookies.
