Well the first day of school was a success! The Lord was so good in the midst of my anxiety. We dropped Cason off and got him comfortable in his new seat. I gave him a kiss and started to tear up. Then headed out the door. He seemed a little nervous and looked back at the door as we walked out. My heart sank.

As we started to walk out and down the hallway I remembered I wanted to get a picture of him with his new teacher. So I ran back and as soon as I walked in the room I saw him talking and smiling. As I walked up to his chair I heard a sweet little conversation.

The little boy across from him asked. “Are you drawing the same thing as me?” Cason responded with a smile and said “no, I’m drawing something different.” So the little boy said “what are you drawing?” Cason replied “haha. I don’t know.”

I needed to hear that conversation. I needed to see his smile. To know he would be ok. To know that he would interact with other kids and feel comfortable. I left that room a second time feeling so much better.

Why does it always feel like whatever stage you are in is the hardest stage of parenting. Every time I step into a new phase or stage I feel like its harder than the previous one.

Right now is so hard. For the last 5 years I’ve always had him around and now he’s 5 days a week for most of the day?!?!

I know Cason takes a while to get use to new people. When he’s in large groups he gets overwhelmed and sometimes scared. I’m his safe place and the fact that I can’t be there to comfort him and gently encourage him tears me up inside. I know that the Lord is with him and honestly he has been covered in prayer over the past month. It’s a new stage we’re in. But gosh it’s hard. It’s hard to watch him grow up and learn how to handle feeling left out, hurt, nerves, fear, courage, and all those things that come with a new situation.

Ok now onto this Healthy Tuna Salad Stuffed Avocado. This recipe came about because I’ve been in need of some high protein meals. Did you know that a pregnant woman needs to be eating 75 grams a day! That is a ton ya’ll. And this recipe has 17 grams in one serving, so it’s perfect!

The tuna salad itself is packed with flavor and once it’s put on top of an avocado it turns magical. You’ll love it. Plus it literally takes less than 5 minutes to make!

Description

Creamy avocado is stuffed with an easy and healthy homemade tuna salad.

Ingredients

Scale

  • 1 5 oz. can white albacore tuna in water, drained
  • 1 tablespoon avocado oil mayo
  • 1 tablespoon stone ground mustard
  • 1 tablespoon finely diced red onion
  • 1 small dill pickle finely diced
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon smoked paprika
  • 1/8 teaspoon black pepper
  • 1 avocado

Instructions

  1. To a small bowl add tuna, mayo, mustard, red onion, pickle, garlic powder, smoked paprika, and black pepper. Using a fork, break up the tuna a little bit and then mix all the ingredients together.
  2. Add mixture to each avocado halve and serve.
